Grill On

For my friends and fans of the ‘Q’, and isn’t that everyone, here is something a little different to try if you have not done so before.
Most of us have attempted the ‘Beer Can Chicken’ over the years with varying degrees of success. I personally do a lot on the rotisserie (rib technique and pics if anyone is interested), but I have found that barbecued ‘Butterflied Chicken’ to be a real crowd pleaser.
If you can, brine the chicken for a few hours or overnight if time permits it will help retain moisture but not required. Remove the back bone (I purchased hand lopping shears years ago from the hardware store just for doing this), and then pop down hard on the breast bone..
Cook on the grill low and slow with the gourmet skills that you have honed over the years.
